Roasted Pear with Maple Pecan Crumble

Ingredients:

Serves 6

3 bosc pears, halved

1/2 cup rolled oats

1/2 cup pecans, roughly chopped

1/3 cup organic maple syrup

1 teaspoon vanilla bean extract

1/2 teaspoon cinnamon

1/4 teaspoon nutmeg

1/4 teaspoon cloves

Pinch sea salt

4 medjool dates, pitted

1/4 cup coconut yogurt

Method

Preheat oven to 200ΒΊC. Line a baking tray with baking paper, set aside.

Scoop out the middle centre part of each pear. Slice a small portion off the bottom so the pears can lie flat.

In a medium sized bowl combine oats, pecans, maple syrup, vanilla, cinnamon, nutmeg, cloves and salt. Using a tablespoon, scoop out the mixture and fill each pear. Cover the tray with another layer of baking paper so the crumble doesn’t burn. Bake in the oven for 30-35 minutes, until the pears are soft and the crumble is crispy.

Cut the medjool dates into small pieces and place on top of each pear. Serve with a dollop of coconut yogurt, pinch of cinnamon and drizzled maple syrup. Enjoy warmed!
