Peach & Prosciutto Salad

RECIPE

Ingredients:

Serves 4

4 ripe peaches

1 cup cherry tomatoes, halved

250g prosciutto, shredded

1/3 cup bocconcini

Basil leaves, to garnish

Sea salt, to taste

Balsamic vinegar, to drizzle

Method

Bring a medium pot of water to a boil. Cut a light cross mark on the top and bottom of each peach using a knife. Blanch peaches for 30 seconds. Scoop out carefully and place them in a bowl of ice cold water immediately.

Peel the peach skin off and cut into wedges. Begin to layer your salad starting with peach wedges, cherry tomatoes, prosciutto and bocconcini.

Garnish with basil, season with salt and drizzle a small amount of good quality balsamic vinegar.
