Peach & Burrata Salad

RECIPE

Ingredients:

Serves 2-3

4 ripe peaches, quartered

1 heirloom tomato, cut into eighths

6 cherry tomatoes, halved

2 small burrata balls

100g prosciutto

Basil, to garnish

Drizzle extra virgin olive oil

Method

Spread peach and tomato wedges onto a large plate. Layer with cherry tomatoes.

Break apart the burrata balls and scatter around the plate evenly. Rip small pieces of prosciutto and follow the same method.

Garnish with basil and season with sea salt & pepper. Drizzle with olive oil before serving fresh.
